RECIPE: Easy Homemade Cashew Mayonnaise

Ever wanted to make your own (very easy) mayo? So much healthier than any commercial store-bought mayo, it’s a guilt-free dollop of yum.

High in healthy fats, as well as a great source of vitamins E, K, and B6, along with minerals like copper, phosphorus, zinc, magnesium, iron, and selenium, you’ll feel the zing with every mouthful.



1/2 cup raw cashew nuts (do not soak)
1/4 cup virgin olive oil
1/4 cup lemon juice
1 tsp English mustard
Salt and pepper to taste


  • Blend the raw cashews, salt and pepper in a high-speed blender until you have a super fine powder.
  • Add to the blender equal parts freshly squeezed lemon juice and olive oil. 
  • Then add mustard. 
  • Blend until thick and smooth. 
  • Add water a tsp at a time until you reach the desired consistency. 
  • Keep for up to three days.
