These homemade tortillas are gluten and dairy free and super easy to make.
This recipe makes 6 tortillas - I usually double the mixture and then I have plenty on hand. You can then freeze and use as needed. Take them out early to defrost on your kitchen bench or 10 seconds in the microwave and they are good to go.
Great to use for wraps for lunches or breakfast burritos.
Whisk all ingredients thoroughly.
On a medium heat use a non-stick pan (if not you will need to use oil) and spoon out with a ladle enough batter to thinly coat the pan.... swirl it around a bit.
As soon as it starts to colour a little flip over.
Put each tortilla on a piece of baking paper and pile them on top of each other and then stick in a freezer bag to freeze.
