Chop walnuts very finely and then add walnuts and salt to a fry pan and toast stirring frequently for 3 – 4 minutes. Turn off heat and add the honey, mixing until walnuts are well coated. Set aside.
Place avocado, dates, cacao, coconut oil and vanilla into a food processor and blend until smooth. Stir the walnuts into the chocolate mixture. Roll into balls and then coat in the desiccated coconut. Place on a tray and leave to set in the fridge for 1 hr and then eat.
If making for school lunches and you have a no nut policy you can omit the walnuts.
