LUNCHBOX RECIPE: Savoury Corn Muffins

A great alternative to sweet muffins, your kids will LOVE these savoury muffins! #healthy

Savoury muffins are always a great way to hide the good stuff from the kids, they’ll love the taste so much they’ll forget what’s in it. Why not try making these savoury corn muffins for an afternoon snack or to pop in the lunchbox, a great alternative to sweet muffins.


1 cup self-raising flour

1 cup of polenta

1 teaspoon baking powder

1/3 cup corn kernels

Chopped coriander

50g grated cheese

¾ cup buttermilk

½ cup oil

1 egg


  1. Sift flour and polenta with baking powder into a bowl.
  2. Stir through corn, coriander and grated cheese.
  3. Whisk together buttermilk, oil and egg and then pour into the flour.
  4. Mix briefly to combine.
  5. Spoon into greased muffin pans.
  6. Bake at 180c for 12/15 minutes or until firm.

Serve warm and enjoy!
