Delicious Christmas Rocky Road

Makes 8-10 slices
Ingredients
- 350g dark chocolate
- 1 tbsp coconut oil
- 1/2 cup pistachios
- 1/2 cup roasted almonds
- 1/2 cup macadamias
- 1/2 cup freeze dried raspberries or dried cranberries
- 1/4 cup shredded coconut
Method
- Line a loaf tin, roughly 10cm x 20cm with baking paper.
- Break chocolate into small pieces, heat in a bowl over a saucepan of boiling water with coconut oil on a very low heat.
- Once melted add as many pistachios, almonds, macadamias, raspberries or cranberries and coconut as you like.
- Transfer into loaf tin and put in the fridge to set.
- Cut into sliced and serve or wrap to give away.
