RECIPE: Delicious Christmas Rocky Road

This delicious Christmas rocky road recipe is sugar-free, gluten-free and simple to make. Thanks to GutAid, it’s sure to be a family favourite this festive season!

If you’re feeling extra creative, try making your own chocolate from cacao. You can also make homemade marshmallows.

Once you’ve made this delicious Christmas rocky road, you can store it in the fridge for up to a week, or freeze it for up to a month in an airtight container.

Delicious Christmas Rocky Road

Prep time 10 minutes
Cook time 10 minutes + 2 hours set time
Makes 8-10 slices


  • 350g dark chocolate
  • 1 tbsp coconut oil
  • 1/2 cup pistachios
  • 1/2 cup roasted almonds
  • 1/2 cup macadamias
  • 1/2 cup freeze dried raspberries or dried cranberries
  • 1/4 cup shredded coconut


  1. Line a loaf tin, roughly 10cm x 20cm with baking paper.
  2. Break chocolate into small pieces, heat in a bowl over a saucepan of boiling water with coconut oil on a very low heat.
  3. Once melted add as many pistachios, almonds, macadamias, raspberries or cranberries and coconut as you like.
  4. Transfer into loaf tin and put in the fridge to set.
  5. Cut into sliced and serve or wrap to give away.
