Family, flavour and the perfect snag at Cleveland Central

Family favourite George’s Gourmet Meats celebrates one year of quality and community at Cleveland Central.

From award-winning sausages to handpicked weekly specials, George’s Gourmet Meats at Cleveland Central has become more than just a butcher — it’s a family hub. As owner George marks the store’s first anniversary, he shares the story of how passion, quality and a lot of family teamwork have made his little shop a big part of the local community.

George, congratulations on your one-year anniversary! What inspired you to open George’s Gourmet Meats at Cleveland Central?

Thank you! Ever since I started butchering, I’ve dreamed of owning my own shop. After years of managing for others, it felt like the right time to do it for myself. I’ve worked in some of Brisbane’s best butcheries, learning from incredible mentors, and I’ve always been committed to offering only the very best — from the meats we source to the way we prepare them. Cleveland is such a warm, community-focused place with a love for quality, so it was the perfect fit.

What sparked your passion for butchery?

I came to butchery a little later, at 24, after trying a few jobs that didn’t quite click. I’ve always loved food, cooking and connecting with people, so this industry felt like home. That passion has only grown.

You’ve made your anniversary a family affair. Why is family such a big part of the business?

When we opened, I thought I’d be here seven days a week on my own. Instead, I had incredible help — my dad, father-in-law, brother, wife, mates, even our neighbour — all pitching in. Our shop manager, Hunter, is like family too. Having loved ones involved keeps us grounded, connected to our customers, and focused on what local families need.

Your snags are award-winning! tell us about the Sausage King success.

We entered on a whim the week we opened and walked away with 3rd best Continental Sausage for our Pork Hot Links and 2nd best Poultry Sausage for our Chicken Parmy. Our customers love the variety — over 60 flavours that change every fortnight — and they’re all made in-house from fresh ingredients.

What makes shopping at George’s Gourmet Meats special?

We source the best — Tasmanian lamb, Bangalow pork, grass-fed Queensland beef, free-range chicken from Mt Cotton — and bone, smoke, and prepare everything in-house.

But more than that, it’s the friendly service. You’ll always get a smile, a chat, and genuine interest in how your family’s going.

What’s next for George’s?

We’re working towards being Queensland’s first small-scale butcher to make salamis in-house. Plus, we’ve teamed up with Extraction Artisan Coffee for creations like coffee bacon and coffee sausages. Yum!
