Super healthy, super easy, super quick, this creamy avocado pasta is sure to become a mid-week dinner favourite.

Creamy avocado pasta recipe

Ingredients

  • 1 medium ripe avocado
  • 1-2 tbsp fresh lemon juice
  • 2 cloves garlic
  • ¼ cup basil, packed
  • 1/2 tsp himalayan salt, to taste
  • 2 tbsp olive oil
  • 1 tbsp water
  • Fresh ground pepper, to taste
  • Spelt spaghetti or zucchini noodles

Method

  1. Cook pasta as per directions.
  2. Combine garlic and basil in your processor and pulse.
  3. Add remaining ingredients and process until smooth.
  4. Drain pasta and toss through sauce.
