Ingredients
- 1 egg
- 400ml can of lite coconut milk
- 1/4 cup sugar
- 1 tsp pure vanilla extract
- 1/2 tsp ground cinnamon
- 1/4 tsp cardamom
- 1/4 tsp sea salt
- 3 cups rolled oats
- 1 cup fresh or frozen berries
- Almonds, shredded coconut and extra berries, optional
Method
- Preheat over to 190C. Lightly spray a 20cm round baking dish with cooking spray.
- In a bowl, beat egg. Add coconut milk, sugar, vanilla, cinnamon, cardamom and salt.
- Stir in oats, berries and optional items if using. Combine well.
- Spread mixture in prepared baking dish. Bake for 35-40 minutes or until top is light toasty brown.
