Easy berry coconut bake recipe

This berry coconut bake is like dessert for breakfast—but healthy. The berries, which are packed with antioxidants and vitamin C, boost immunity, and the oats are also rich in nutrients.

Take a few minutes on your weekend and prep this recipe so you have something for breakfast in the week ahead. This is an ideal bite if you don’t like overnight oats or if you don’t have much time on your hands to create a hot breakfast. Talk about removing some of the pressures of life. Ha!

Other things you’ll like about this recipe are that you can also freeze it, adapt it to suit your preferences and it’s easy to prepare.

Serves 8-9

 

Ingredients

  • 1 egg
  • 400ml can of lite coconut milk
  • 1/4 cup sugar
  • 1 tsp pure vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/4 tsp cardamom
  • 1/4 tsp sea salt
  • 3 cups rolled oats
  • 1 cup fresh or frozen berries
  • Almonds, shredded coconut and extra berries, optional

Method

  1. Preheat over to 190C. Lightly spray a 20cm round baking dish with cooking spray.
  2. In a bowl, beat egg. Add coconut milk, sugar, vanilla, cinnamon, cardamom and salt.
  3. Stir in oats, berries and optional items if using. Combine well.
  4. Spread mixture in prepared baking dish. Bake for 35-40 minutes or until top is light toasty brown.
