Recipe: Nude food pizza muffins

Inspired by the Nude Food Revolution taking over school lunch boxes at the moment? We are! We’ve been cooking up a storm in the kitchen, making an easy ‘nude’ lunch that will not only fill our little ones’ tummies, but reduce unnecessary waste in their lunch box.

These pizza muffins are a hit! Plus, they are incredibly easy to pull together. We’re also giving you our top tip for keeping the pizzas warm in your child’s lunch box.

 

Nude pizza muffins recipe

Prep time 10 minutes
Cooking time 15 minutes
Serves 1

Ingredients

  • 2 English muffins
  • 2 tbsp tomato paste or tomato salsa
  • Pizza toppings of your choice (capsicum, ham, salami, mushrooms, zucchini, tomato etc.)
  • 1/2 cup grated cheese

Method

  1. Preheat oven to 160C.
  2. Using a knife, cut each muffin in half and spread with tomato paste or tomato salsa.
  3. Put on your favourite toppings.
  4. Sprinkle grated cheese over each muffin.
  5. Place on a baking tray and into the oven for 5 minutes.
  6. Remove from oven. Take each pizza muffin and wrap in aluminium foil. Then, place each wrapped pizza muffin back into the oven for a further 10 minutes.
  7. To keep warm in the lunch box, pour boiling water into it for 5 minutes and then dump it out. Place pizza muffins in a container, close the lunch box, and place them in an insulated lunch bag.

The aluminium foil used to wrap the pizza muffins can be put into the yellow recycling bin if it is rinsed of food residue. Have your child scrunch it up into a ball about the size of a fist.
